Pancakes with a kick
Let’s start by saying I hate mornings. It is really hard for me to wake up and it is really hard for me to function during the first couple hours of the day. But paradoxically, I love breakfast. And I absolutely love coffee. So this caffeinated pancakes are basically everything I could ever ask for, specially because I can do them one night in advance and just heat them in the morning. You could do the same, or, you know, just do them in the morning like a normal person would. Enjoy the lift!



Ingredients:
2 organic bananas
3 organic eggs
2 tbsp organic peanut butter
3/4 cup ground organic oats
pinch of salt
1/4 cup of Americano ilMorso chunks (you can always add more)
Directions:
- Using a blender, mix the bananas, eggs, peanut butter and salt together.
- Pour blender content in a bowl, add the ground oats and the ilMorso chunks and stir until smooth.
- Heat a lightly oiled griddle or frying pan over medium high heat. Scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot with strawberries on the side.
*This recipe makes 8 medium size pancakes.
