Another referendum is held informing the Swiss that no negotiation was possible and asking for confirmation, and that referendum is once again lost by the government, thereby also triggering a collapse of the trade deals and the imposition of tariffs on Switzerland.
OK, what now?

Highly unlikely. When the Swiss voted, most voters were uneducated or mislead on the Guillotine Clause. They thought they cold get their way with the EU as was the case with the 200 treaties you mentioned. The mood swung considerably once the clause was discussed in earnest in the media.
Historically the Swiss were very pragmatic when it came to their prosperity. Take for example the trade pacts with both the NATO block as well as USSR and the Non-Alignment movement.
They will just put it up to a second vote and the Swiss people will change their mind.
