I wouldn’t leap to the conclusion that non-GMO ingredients have been selected for a marketing or scientific (or non-scientific) reason. Distillers and consumers demand taste consistency spanning generations of production. Moreover, mash bills are proudly-maintained traditions. If the non-GMO product has been found to alter the flavor, sticking with it would kill a brand.
