Deliciously Tasty Roasted Veg and Chorizo Spelt Lasagne

Ingredients

Spelt Lasagne sheets
120g Manchego grated
1 parsnip
1 large /2 small courgettes
1 stick celery
1 red onion
half of each — red/green/yellow pepper
4/5 mushrooms — shitake
50g cubed chorizo
jar tomato pasta sauce 100ml
1 tbsp tomate puree
A knob of goats butter

Chop into small pieces — parsnip, courgettes, red onion, peppers, celery and roast in oven with a drizzle of olive oil for approx 20 mins on a high heat 240–250 degrees, taking care for them not to burn.

In the mean time put the goats butter, chorizo and mushrooms into a large pan on a medium to high heat and gently brown. Add the sauce and let simmer for 10–15 mins on a low heat until the veg are roasted. Remove the roasted veg and turn the oven down to 180 degrees. Add the roasted veg to the sauce and stir.

Put a thin layer of the veg & sauce on bottom of an oven proof dish. Place a layer of 3–4 sheets of spelt lasagne (no need to cook the sheets first) then another layer of the sauce and so on, until you have 3–4 layers, with a sauce layer on top.

Top with the grated manchego making sure all the top is completely cover with cheese. Place in the oven pre-heated at 180 degrees for 40 mins.

Remove and enjoy….. delicious!
