Oaty Pancakes Recipe… Yum!
Looking for a delicious alternative to wheat pancakes and cereal…. then look no further! Try these oats & cottage cheese pancakes topped with blueberries, honey & cinnamon. Guilt free & totally Delicious!
Oats are a fantastic alternative to wheat in these pancakes. Oats have a high fiber content, are a rich source of magnesium, B vitamins, they increase appetite-control hormones and help remove cholesterol from the digestive system that would otherwise end up in the bloodstream. Plus they keep you going for hours and should keep your hunger at bay until lunch time.
Blue berries are rich in antioxidents to detox your system, packed with vitamin C which helps your body deal with stress and full of fibre which helps to regulate blood sugar levels.
Make sure that you use fat free cottage cheese rather than the full fat kind. Cottage cheese contains B-12, which is important to nerve cell function and the body’s ability to use iron. It also contains riboflavin, which helps with the body’s ability to metabolize carbohydrates into energy. Cottage cheese also provides smaller amounts of B-6, panthothenic acid, thiamin, niacin and folate. Plus it is a good low fat source of protein.
Oaty Cinnamon Pancakes with Blueberries
50g rolled oats
100g fat free cottage cheese
Handful of blueberries
1 teaspoon honey or maple syrup
1 teaspoon cinnamon
1 Mix the oats, fat free cottage cheese and eggs together in a bowl
2 Heat a frying pan and add a little butter (it’s healthier to cook with butter than oil, but only if your food isn’t swimming in butter!)
3 Place half the mixture in the pan, patting into a pancake shape and cook for 2–3 mins each side
4 Place on a plate and top with your blueberries, a sprinkle of cinnamon and maple syrup or honey and enjoy!
Top tips — For a smoother finnish blend the ingredients in a food processor. I personally like a more rustic finish so stirring the ingredients together in a bowl works well. Plus is quick, easy and less equipment to clean afterwards!
You can choose to add the cinnamon into the pancake mix rather than sprinkle on afterwards if you like. Cinnamon is fantastic when combined with a high carb food like oats as it helps lessens the impact on your blood sugar levels. Cinnamon’s Scent Boosts Brain Function. Cinnamon is also an excellent source of fiber and the trace mineral manganese while also a very good source of calcium.
If you really don’t like the taste of cinnamon then you can make them without or try adding nutmeg. Nutmeg also has an array of health benefits including it stimulates your brain, as a result can help eliminate stress and fatigue; can help with digestive related problems such as gas and bloating; can help eliminate bad breath due to its antibacterial properties; sleep aid.
