Great read for Maximum Valuable Performance. But MVP has its own place in a product development and idea validation. Like you mentioned — “It’s also a great methodology when you’re trying to prove a concept”. It is definitely not meant for delivering a final product and for someone who is trying to use it that way will definitely loose their customers. Understanding the concept/philosophy (MVP/Agile/etc) and delivering while staying true to its meaning is what shows the value of a firm/team. It can be easily identified by their customers/client whether they are just using the term to cover up or whether they are transparent and truly delivers with the value they stand by.
