Chinese chicken salad


-1 cup of shredded cos lettuce

-½ cup of shredded cabbage

-1 spring onion finely chopped

-½ large carrot shredded

-½ handful of coriander shredded

-¼ cubed avocado

-1 cup of shredded chicken

-10 peanuts roughly chopped to garnish

Light sesame ginger dressing:

-1 tablespoon of sesame oil

-½ teaspoon soy sauce

-1 tablespoon of rice vinegar

-½ tablespoon of honey

-½ tablespoon of sesame seeds

-2cm of fresh ginger, peeled and grated finely


  1. In a large bowl, combine all of the salad ingredients; tossing through
  2. In a small bowl, combine all of the salad dressing ingredients and whisk through;
  3. Toss the salad with the dressing or leave the dressing to the side;
  4. Sprinkle with crushed peanuts of top

I personally love this recipe because it is a healthy alternative to Chinese chicken and although there are lots of ingredients there are not a lot of steps to creating this meal making it quick and easy to prepare. I also love the fact that it is healthy which makes it a good choice for people who struggle to find healthy alternatives that are still tasty. The honey gives the dish a nice sweet flavour and the crushed peanuts add crunch
