The Best Pancakes I Ever Made

Yeah. The Internet is probably awash with pancake recipes on Shrove Tuesday. Here’s one more to add to the pile!

This year, I stumbled onto the perfect batter recipe. Light and fluffy. Made the perfect number. Cooked well. Kids loved them.

I think the difference this year is that I only had self raising flour. I usually never buy it, so it was probably very old. It worked well though!

My three year old, who hates getting sticky, enjoying sticking his hands in some cream. Go figure.

For 10 pancakes you need:

  • 200g self raising flour
  • 500ml whole milk
  • 1tbsp vegetable oil, plus more for frying
  • 4 eggs

Literally just mix it all in a bowl, use an electric whisk until it’s all creamy. The oil in the batter helps the pancakes not stick to the pan. You probably need to add extra to the pan, though. Or maybe not. Maybe I just suck at frying stuff (which is pretty likely).

This year I served some with molten cheese and ham, folded over like an omelette. Followed by some more with a choice of berries, cream, chocolate sauce, mini marshmallows and sprinkles.
