I’m a Vegetarian Who Eats Meat, and That’s Okay

Mitchell, this really resonates with me. I’ve been cutting meat out of my diet by percentages for the singular reason that it makes me feel better. Same with gluten and grains. I hate the “but you’re undiagnosed” argument because I never claimed to be celiac or have a gluten allergy. I’m simply talking about which foods make my guts feel normal and which make them unhappy. It’s been so freeing to know that I don’t _have_ to eat any one thing just because it’s there (though I am respectful of hosts and eat what I’m served to avoid waste and controversy as well). It’s changed the way I cook and it’s changed the way my husband and I look at food. Eating is becoming a pleasure again.
