Pork Rind Panko Pancakes
2 c pork panko
1/4 tsp baking soda
1 egg
1/2 tsp vanilla
1 tbsp Greek yogurt
1 tbsp honey
1/2 c water
Yeild: 6, 3” pancakes
Using a medium mixing bowl, blend dry ingredients thoroughly.
Crack egg into another bowl and whisk thoroughly. Add yogurt, honey, vanilla and water. Whisk until bubbly.
Fold wet and dry ingredients together. Let stand 5 minutes. Batter will be thick.
Place skillet on medium heat. Melt 1 tsp butter in the pan until it sizzles.
Pour 3 tbsp of batter into hot skillet for each pancake. Gently flatten it into a 3” circle.
Cook until it is firm with bubble holes on top. Approximately 3 minutes.
Gently lift the edges with a spatula all around the outside moving towards the center. If it is brown flip it over carefully so it doesn’t crumble and brown to taste.
Top with maple syrup, or favorite garnish.
