I remember that question. I may not have spoken up enough, but my point about what separates cook from chef and pixel pusher from designer is “intention”. Intention underpins the decisions and the direction taken at every turn… whether it’s the flavor profile, the pairing, the texture, the plating and the rotation of the plate — the same for every design decision on the arsenal of color, texture, alignment, spacing, workflow, emphasis, grouping… “Why?” What was your intent. The thoughtful due dillegence a designer or a chef takes to fully cover the intent of every decision made is what separates you as chef/designer.
