Always looking for the maximum performance in the grinding work of the grain, man has been developing different gadgets and machines that range from a simple pair of stones to crush to the technologies currently used.

Once the grain is milled, the flour falls into the harinal, which is a wooden box that has a sieve that allows screening the flour, separating the thickest from the thinnest.

Each mill is composed of two wheels (stone) the lower one that is fixed and the upper one mobile, solera and slide respectively. Both are cylindrical and their most usual dimensions oscillate between 90 and 130 cm. diameter; the thickness decreases as they wear out but oscillates between 45 and 50 cm. when they start to be used.

The blood mills are those that for their operation make use of animal strength or the strength of man. An evolution of this system were the rotating stone mills, where a fixed stone, which served both as a containment vessel, and a mobile upper stone that rotated on the first, thus crushing the grain.

However, these rudimentary contraptions did not have sufficient production capacity for industrial use. For this purpose, larger mills were built, using stones of a truncated cone shape. One of the two stones is fixed and the other mobile, placed on the previous one, which was traversed from top to bottom by a central hole through which the cereal that was going to be ground was introduced. The mobile stone was rotated by means of one or two levers embedded in one or two side holes.

The windmills are based on the use of wind energy to move the mechanisms of the flour mill. They can be classified into two types:

Windmills of vertical axis: formed by a number of vanes attached to a vertical axis, which is in turn connected to the stones, either directly or through intermediate mechanisms.

Horizontal axis windmills: Its axis is not really parallel to the ground. On the shaft are attached sails or sails that collect the energy generated by the wind impulse and transmit it to the wheels through a series of transmission mechanisms.

The first wind mills destined to the milling of cereals, of which it is known, are “the Persian mills of vertical axis”.
