Augusto, I couldn’t agree more. Everything dead on. I’m American born and raised and grew up drinking nasty drip coffee (Dunkin Donuts, 7-eleven, etc.). My wife and I wanted to open up a coffee shop, so I began learning about espresso. I wanted a local roaster and tried many roaster’s beans on an old Faema single group espresso machine I bought on Craigslist. Even on my first taste of espresso I could tell good from bad. Some tasted awfully sour no matter how I tweaked the grind. We found a good local roaster that was true to Italian style. He was from France, so he was having none of this American hipster crap. We ended up getting a new machine for the shop. Paid $8500 for a new 2 group Faema. It worked great.
