Clearly written by someone that knows restaurants from the inside. Nice write-up. Less tangibly, it seems to all add up to the restaurateur’s ability to create a place where people just want to be — which to me starts with their ability to create a place where they themselves want to be. If the team feels like they don’t want to be working there, that’s pretty quickly going to translate into people not feeling like they want to be eating and drinking there, either.
