Delicious Keto Crispy Chicken Thighs Recipe

Ingredients:

  • 4 bone-in, skin-on chicken thighs
  • 1/2 cup grated Parmesan cheese
  • 1 cup almond flour
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 large egg
  • 2 tbsp olive oil or avocado oil

Instructions:

  1. Preheat the Oven: Set your oven to 400°F (200°C). Place a rack in the middle of the oven.

2. Prepare the Coating:

  • In a shallow bowl or plate, mix together the grated Parmesan cheese, almond flour, garlic powder, paprika, dried oregano, salt, and black pepper. This will be your breading mixture.

3. Prepare the Egg Wash:

  • In another bowl, beat the large egg.

4. Coat the Chicken Thighs:

  • Pat the chicken thighs dry with paper towels. This helps the coating stick better.
  • Dip each chicken thigh into the beaten egg, ensuring it is fully coated.
  • Dredge the egg-coated chicken thigh in the Parmesan and almond flour mixture, pressing lightly to help the coating adhere. Make sure the entire surface is covered.

5. Bake the Chicken Thighs:

  • Place the coated chicken thighs on a baking sheet lined with parchment paper or a wire rack. If you use a wire rack, it helps the chicken cook evenly and become extra crispy.
  • Drizzle olive oil or avocado oil over the top of the chicken thighs. This adds extra crispiness and flavor.

6. Cook the Chicken Thighs:

  • Bake in the preheated oven for 35–40 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is crispy and golden brown.

7. Rest the Chicken:

  • Let the chicken thighs rest for a few minutes after baking. This helps the juices redistribute and keeps the chicken moist.

8. Serve and Enjoy:

  • Serve the crispy chicken thighs with a side of your favourite keto vegetables or a fresh salad.
