These are my favorite Spanish stews and how I make them. Feel free to change the amounts and technique and make it yours. Where chorizo is called for, chorizo Palacios works great.

Heat up some olive oil in a pan, then fry 4–6 sliced garlic cloves in low heat until golden, then remove from the heat.
In the same oil fry some jamon serrano in small cubes, and also remove.
One can of Canellini beans (Lentils also work great).Olive oil and Spanish white wine vinegar.Optionally, a bit of finely minced onion and/or a cubed tomato. — Season, mix and serve.
