Late Summer No Baked Fig Tart
with Chia Crust and Acai Cashew Cream Filling
Make one 9 inch tart
Chia Crust

Crust Ingredients:
* 5 large dates
* 0.5 cup chia seeds
* 2 tbsp coconut oil
* 0.5 tsp vanilla extract
* a pinch of ground nutmeg
* 2 tbsp shredded coconut flakes
Crust Instructions:
- Remove the pits from the dates and discard.
- Pulse the dates in a food processor until they form a paste.
- In a medium bowl, mix the date paste with the chia seeds, coconut oil, vanilla, nutmeg and coconut flakes.
- Roll this dough into a ball and press into the bottom of a tart pan or a glass baking dish.
- Keep in the freezer until ready to use
Acai Cashew Cream Filling

Filling Ingredients:
* 1.5 cup raw cashews, soaked in purified water overnight
* 2 tbs coconut butter softened
* 2 tbs maple or sweetener of choice (optional)
* 1 packet frozen acai
* 0.75 cup (~1 large) chopped banana (can substitute with any creamy fruits)
* 1 tbsp vanilla extract or 0.5 vanilla pod seed scrapped
* 1 tbsp maca powder (optional)
Filling Instructions:
- Drain the cashews and add to a blender (Blendtec) with the coconut butter and optional sweetener. Blend until smooth and creamy (using the smoothie cycle).
- Add acai, banana, vanilla extract and maca powder to the blender and blend until smooth and creamy (using smoothie cycle).
- Remove chia crust from the freezer. Pour the filling into the crust and chill the tart in a refrigerator while preparing the topping.
Fresh Fig Topping
Topping Ingredients:
* 5–7 medium figs (any varieties)
* 1 tbsp crusted pecans or pistachios (optional)
Topping Instructions:
- Slice figs into 0.25 in wedges lengthwise (about 8 wedges per medium fig).
- Arrange the fig slices into a circular floral patterns. Gently press each sig slice into the cashew cream filling.
- If using nuts, chop them into small dices and sprinkle them on to the prepared tart.
- Return the assembled tart to the refrigerator, if serving immediately, or chilling in the freezer if serving later.
