Meatballs with Red Wine Glaze Sauce & Veggie Medley with Greek Yogurt Dressing

Who doesn’t love a good meatball? No one that I know that’s for sure. A childhood staple when I was growing up, my mom would make different varieties jampacked with different proteins and vegetables to make sure we were eating the nutrients we needed.

This recipe is my interpretation of what meatballs are. They are not only made in a red wine reduction that then glazes the meatballs, but they are composed of ritz crackers to give a crunchy texture and a myriad of vegetables to add some green to this meaty dish. Lastly, the greek yogurt dressing helps to lighten the dish by bringing a refreshing, cooling, and zesty sentaion.

I love to make this for dinner parties or as a cozy comfort meal. These meatballs can be stored for a week and will still taste just as delicious!

Ingredients:

Meatballs:
- Ground beef (turkey or ground chicken would work as well)
- Spinach: fine chop
- 1/2 Onion: mince
- 1 Shallot: mince
- 4 Garlic Cloves: mince
- Crackers(Ritz)/Day old bread (stale)/Breadcrumbs: crushed
- 1 Whole Egg
- 1 Egg Yolk
- Parmesian Cheese
- Seasoning (Salt/Pepper and others to taste)
- Red Wine (any)
- grapeseed/sunflower oil (or other neutral oil)

Veggies:
- Any of your preference!

Greek Yogurt Dressing:
- Unflavored greek yogurt
- 1/2 lemon (for juice)
- Seasonings: flakey sea salt, pepper, garlic powder, spicy paprika

Directions:

Meatballs:
- In Bowl: Add the ground beef, spinach, onion, shallot, garlic, crackers, eggs, cheese, and seasoning then combine well
- Once combined well, take the mixture and form balls to whatever size your heart desires
- In Pan: Heat pan with neautral oil on medium/high heat (adjust as necessary) then add the meatballs and golden brown the sides
- After coloring the top/bottom of the meatballs, lower the heat & add about 1.5 cups of red wine into the pan and reduce till thickened
— If baking the meatballs, golden the sides quickly then add the meatballs to a baking tray and cook on 375˚F for 25/30 minutes or until well cooked
— Take the pan used to golden the meatballs and add the red wine and reduce
- As the wine reduces, make sure to turn the meatballs to ensure all sides are coated then set aside

Veggie Medley:
- Preheat oven to 395˚F
- Cube/chop your veggies to a small/medium size
- Baking Tray: cover with parchment paper, add the veggies and cover with a healthy amount of olive oil, add seasonings (salt & pepper, plus anything else to taste)
- Place into the oven till veggies are crispy and golden

Greek Yogurt Dressing:
- In Bowl: Add the greek yogurt, lemon juice, seasonings and mix
- Once mixed, plop a good dollop on top of veggies
