Savory Miso Spinach Oatmeal

Lately, I have been sick. Craving something cozy, but not too sweet, I started digging around for ideas for a savory oatmeal. After a little bit of trial and error, I came up with a savory miso spinach oatmeal, with just a hint of honey for balance. I topped it with a mixture of sautéed garlic, ginger, scallions, and shiitake. Then I added on some avocado, a sprinkle of sesame seeds, soft boiled egg, and — why stop there! — candied bacon.
Ingredients
For the oatmeal
- 1 cup broth
- 1/3 cup old fashioned oats
- 1 small handfull frozen chopped spinach
- 1 tsp white miso paste
- 1 to 2 tsp mirin (optional)
- 1 to 3 tsp honey (to taste)
- ½ to ¼ tsp low sodium soy sauce or tamari (to taste)
Toppings
- 1 tbsp sesame oil
- 1 tsp grated fresh ginger
- 1 to 2 cloves garlic, diced
- 2 to 4 scallions, chopped
- ¼ cup shiitake mushrooms, chopped
For the candied bacon
- 2 strips bacon
- 1 to 2 tbsp brown sugar
