Savory Miso Spinach Oatmeal

Lately, I have been sick. Craving something cozy, but not too sweet, I started digging around for ideas for a savory oatmeal. After a little bit of trial and error, I came up with a savory miso spinach oatmeal, with just a hint of honey for balance. I topped it with a mixture of sautéed garlic, ginger, scallions, and shiitake. Then I added on some avocado, a sprinkle of sesame seeds, soft boiled egg, and — why stop there! — candied bacon.

Ingredients

For the oatmeal

  • 1 cup broth
  • 1/3 cup old fashioned oats
  • 1 small handfull frozen chopped spinach
  • 1 tsp white miso paste
  • 1 to 2 tsp mirin (optional)
  • 1 to 3 tsp honey (to taste)
  • ½ to ¼ tsp low sodium soy sauce or tamari (to taste)

Toppings

  • 1 tbsp sesame oil
  • 1 tsp grated fresh ginger
  • 1 to 2 cloves garlic, diced
  • 2 to 4 scallions, chopped
  • ¼ cup shiitake mushrooms, chopped

For the candied bacon

  • 2 strips bacon
  • 1 to 2 tbsp brown sugar
