I bottled my very first batch just last night so this is super timely! I was worried I would mess it up too but honestly I just dumped the scoby in with the tea and sugar and the bacteria proceeded to do all the work over the course of a couple weeks and nothing went wrong. And then I didn’t think the second fermentation would work, but it totally IS working! I had fun and my kombucha is delicious so far so I’d say go for it. It’s very hands-off, seems hard to mess up and it hasn’t been a time or resource suck for me at all : )
