To stop Firefox 53 from immediately updating to the latest version, you have to make sure there are no updates on your machine (~/Library/Caches/Mozilla/updates/Applications/Firefox/updates/ on a Mac) and turn off the auto-update option in preferences:advanced. Since it does stuff on startup if the option isn’t turned off, it may take several reinstalls to actually get a version 53 that sticks.
