Busy Mom Meal: Ground Beef & Carrots

Last night I had an awful earache…stabbing pains from 1am til about 6am. So I didn’t get much sleep. It it reminded me of days with a newborn (I shudder like the hiyenas in Lion King when they hear “Mufasa”!!).
I was productive today but hit a wall of tiredness around 4:30pm. Dinner needed to be quick and easy and yes…early!
So I whipped up one of my favorite go-to dinners: ground meat & carrots
I switch out the meat based on what’s in the freezer! Today was grass fed ground beef from Butcher Box.
And chopping is a breeze with my awesome little veggie chopper I snagged off of Amazon! No tears popped out when prepping the onion!
So let’s get to the recipe:
Ground Meat & Carrots
Prep time: 5 min
Cook time: 20 min
Feeds our family of 4!
Ingredients:
1 pound ground meat (I use grass fed ground beef or ground turkey)
1/2 yellow onion
3 cups baby carrots
Salt
Pepper
1/2 TBSP olive oil
Cooked brown rice or quinoa (optional)
Steps:
- Pour olive oil into a medium skillet.
- Dice the onion (I use the veggie chopper to make it super fine so the kids won’t notice!)
- Heat the skillet to medium and stir in the onions. Cool for appx 5 min, stirring frequently.
- While the onions start to cook, chop the carrots (I also make these into teeny bits. They like veggies but they’re less likely to dissect it if it’s small!)
- Add carrots to the skillet & stir well.
- Add in the ground meat and use your spoon or spatula to break it into tiny chunks because…kids.
- Cover and cook for 10–12 min or until ground meat is thoroughly cooked. Stir occasionally during this time.
- Serve plain or over brown rice or quinoa!
I love his meal meal because it makes delicious leftovers. I was pretty bummed that my family loved it so much that we ate it all!!! (Good problem to have, right?!?!)
