BLACK BEAN AND TUNA SALAD

This salad not only tastes outstanding, but is also jam packed with so many vital nutrients that’s it’s like a nutrition injection!

If you are vegan, drop the tuna and egg.

Ingredients

  • Cos Lettuce x 1 head — high in water and calcium (Hydration and bone health)
  • Handful watercress and rocket — Sulforaphane (good for cancer prevention, cardio health, detox)
  • Black Beans x ½ can — High levels iron, protein and fibre (Great for the blood and cardio health)
  • ½ large avocado — High in good fats and vitamins and minerals (Helps balance cholesterol)
  • Tomatoes sliced — High in lycopene (Good for reduced risk of heart disease and cancer)
  • ¼ Cucumber sliced — Good source of hydration and helps to control blood pressure
  • ½ Red pepper sliced — High in vitamin C (Very powerful anti oxidant = helps rid body of damaged cells)
  • Black Sesame seeds 1tbsp — omega 3 and fibre (Great for digestion, brain function and immune system)
  • Mung bean sprouts handful — high in anti oxidants and packed with vitamins, minerals and fatty amino acids and folate (Folate assist in making red and white blood cells and amino acids vital for muscle growth)
  • 1 egg boiled and quartered — Good source of protein and choline (choline assists in maintaining and rebuilding liver cells)
  • ½ Tuna — good source of protein, omega 3 and iodine (iodine very helpful to optimum thyroid function)
  • Croutons — for crunch and texture

Method

Clean all the vegetables cut them up and place in your salad bowl

Start with the lettuce and move onto the chunky veg

Finish with the tuna (if using), bean sprouts and sesame seeds

Good quality olive oil and balsamic vinegar makes a good dressing
