Ingredients:

  • 2 lbs beef stew meat, cut into 1-inch cubes
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup water
  • 1 cup radishes, halved
  • 1 cup carrots, sliced (optional for keto, use in moderation)
  • 2 celery stalks, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce (optional, check for keto-friendly version)
  • 1/4 cup fresh parsley, chopped (optional for garnish)

Instructions:

1. Prepare the Beef:

  • Season the beef stew meat with salt and pepper.

2. Sear the Beef:

  • In a large pot or Dutch oven, heat the olive oil over medium-high heat.
  • Add the beef in batches, searing until browned on all sides. Remove the beef and set it aside.

3. Sauté the Aromatics:

  • In the same pot, add the chopped onion and sauté for 3–4 minutes until translucent.
  • Add the minced garlic and cook for another 1–2 minutes until fragrant.

4. Add the Liquid:

  • Return the seared beef to the pot.
  • Pour in the beef broth and water, stirring to combine.
  • Add the tomato paste and Worcestershire sauce (if using).

5. Add the Vegetables:

  • Add the halved radishes, sliced carrots, and chopped celery to the pot.
  • Stir in the dried thyme, dried rosemary, and bay leaves.

6. Simmer the Stew:

  • Bring the mixture to a boil, then reduce the heat to low.
  • Cover and let the stew simmer for about 2 hours, or until the beef is tender and the vegetables are cooked through.

7. Adjust Seasoning:

  • Taste the stew and adjust the seasoning with salt and pepper as needed.

8. Serve:

  • Remove the bay leaves before serving.
  • Ladle the stew into bowls and garnish with chopped fresh parsley if desired.
