Ingredients:

  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1/4 cup unsalted butter, melted
  • 1/4 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh chives (optional)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease the muffin cups with butter or cooking spray.

2. Mix Dry Ingredients:

  • In a large mixing bowl, whisk together the almond flour, coconut flour, baking powder, garlic powder, onion powder, and salt until well combined.

3. Combine Wet Ingredients:

  • In a separate bowl, beat the eggs until smooth.
  • Stir in the melted butter and heavy cream until well combined.

4. Combine Wet and Dry Ingredients:

  • Pour the wet ingredients into the bowl with the dry ingredients.
  • Mix until just combined, being careful not to overmix.

5. Add Cheese and Chives:

  • Fold in the shredded cheddar cheese, grated Parmesan cheese, and chopped fresh chives (if using) until evenly distributed throughout the batter.

6. Fill Muffin Cups:

  • Spoon the batter evenly into the prepared muffin cups, filling each about 2/3 full.

7. Bake:

  • Bake in the preheated oven for 18–20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

8. Cool and Serve:

  • Allow the muffins to cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
  • Serve warm or at room temperature. Enjoy these savory cheese muffins as a delicious keto-friendly snack or side dish!
