It’s very simple; you cannot eat meat and call yourself a vegetarian. Just like how Lea Michele cannot eat cheese and call herself a vegan. There aren’t exceptions to these terms. I understand, in a way, what you’re saying, but whether your reasonings are understandable or not, it doesn’t change the fact that if you consume meat, you are not vegetarian.
Also, to comment on this idea that choosing not to eat meat is a ‘luxury’: the cheapest foods on the planet are plant foods. Chickpeas, lentils, potatoes, rice, legumes, and the list goes on. These foods also are often the very foundation of a lot of meals, so it’s not like if you could only afford these types of foods you would starve or not have the means to create hearty, satiating meals- quite the opposite.

That being said, I understand your want to not waste food, and that is somewhat admirable. I, personally, could not do what you do because the taste, texture, smell or just sheer thought of eating meat makes me want to gag, but please don’t misinterpret what I’m saying as me rejecting your efforts. A very key pet hate of mine is when people label themselves as ‘vegetarians’ or ‘vegans’, but then follow with the taglines ‘but I still eat fish’ or ‘but I still drink milk’.
