The ultimate smoky Nigerian jollof rice recipe.

Hey guys, today I’m going to be sharing with you all how I make my smoky Nigerian Jollof rice. The best jollof rice in the world.

Jollof rice is a rich, satisfying meal made from rice cooked in a tasty tomato sauce.

Ingredients

  • Rice.
  • Groundout oil.
  • Chicken.
  • Pepper mix. Which consist of tomatoes, bell peppers, and scotch bonnet pepper.
  • Tomato paste.
  • Onions.
  • Ginger and Garlic
  • Curry and thyme.
  • White pepper.
  • Bay leaves.
  • Butter.
  • Bouillon cubes.
  • Salt.

Wash your chicken properly and season to taste with onion, curry and thyme, salt, bouillon cubes, and 1 scotch bonnet pepper for heat. Put it on fire and allow it to sweat out its moisture before adding enough water to cook properly.

  • Your chicken stock is very very important for your Jollof rice.

While your chicken is on fire, proceed to roast your pepper mix. This is optional but it will take your jollof rice taste to the next level.

Place your pepper mix, onion, and garlic into the oven pan. Drizzle some oil on the pepper mix and roast in the oven on low heat for about an hour.

You don’t have an oven? That’s fine, use a nonstick pan, add some oil to it, place your peppers facing down, and let it roast on very low heat.

Take out your protein from the fire, and fry or air fry whichever way you prefer. Sieve out the residues from the stock and set it aside.

After roasting, take out your pepper mix and blend till it gives you a smooth consistency.

Heat some groundnut oil in a pot, add your onions and bay leaves, and fry for about 2 minutes until fragrance.

Add your tomato paste, and fry properly for about 7 minutes to give you that sweet and not sour taste. Make sure to keep stirring while frying to prevent it from burning. Add your blended pepper mix and let it fry.

To season, add some curry, thyme, white pepper, bouillon cubes, salt, and allow to fry. At this time, the pleasant aroma would have filled the whole atmosphere.

Wash your rice thoroughly and add it to your tomato sauce, stir, and allow it to fry for about 4 minutes. Add your chicken stock and a little water. Your liquid should be slightly above the rice because Jollof rice needs heat and not too much liquid. Cover and allow it to cook for about 15 minutes.

After 15 minutes, open and stir, then cover again with foil paper to trap in enough heat for it to completely cook. Give it about 25 more minutes. After 25- 30 minutes, add sliced onions, tomato, and butter, and stir together.
