Autumn may be the perfect time for soup, yet who can think of soup when it’s still 95 degrees outside here in Texas?? Well, they say it’s coming this weekend, so I for one will be ready with this easy, delicious, keto-approved soup!
For those of you who know me, my blog (Alternative Lifestyle)or follow me on social media, you all know I’m following a keto lifestyle at least 80% of the time. I guess what I do could be considered “dirty” keto because I cheat with a drink or some chips and salsa from time to time…ok, every week on date night.
When the temperatures dip, that is the perfect time to whip out the old slow-cooker and whip UP some outstanding soup, stew, gumbo, or chili. Me being the Pinterest lover that I am, always have go-to recipes I can modify, or prepare just as the directions tell me to, and stay in compliance with my keto diet and lifestyle.
This one I’m about to share is called The Bomb Soup for good reason. It is chock full o healthy fats, which means it can be classified as a fat bomb, hence the name. I usually make sweet fat bombs, yet this one is savory, cheesy, and just plain delicious! Easy too: all you do is put all the ingredients into a crockpot (once you brown your ground beef) and cook on low for 4–6 hours.
Ready for the recipe? Here it is!!
Keto-The Bomb Soup
1lb ground beef
1block of cream cheese
1 green bell pepper
1 32oz. box of beef broth
Brown ground meat, pepper, onion together, transfer to the crockpot, add remaining ingredients. Cook on low for 4–6 hours until cheese is melted.
Unfortunately, I could not find the nutrition info on this recipe, yet I trust there is nothing bad for you in this soup.
I would pair it with these delicious Cheesy Keto Biscuits from Mark’s Daily Apple. Click on the link for his incredible recipe!
