Hi Humbert sorry for the late reply but I wanted to clarify a few things:

  1. As a member you do get a choice where to eat: you chose to eat at the club. And while members were told the membership and meals included tips, they actually weren’t (mentioned this in the article).
  2. The staff change quite frequently since there’s a high turnover rate. And even if the staff remains the same, this is no different to other restaurants. If we go with your theory, then a customer who chooses to eat at a restaurant frequently and comes to know the staff, would be subjected from tipping (which does not happen).
  3. Thirdly, while there are different shifts, the staff usually work doubles (meaning lunch and dinner) hence the long 12 hour shifts. While night shifts may provide more tips (if there was tips), the restaurant gives equal shift opportunities to everyone unless you state you can only work dinner or lunch.

The points you made are things that happen in every restaurant, not just at this club but does that mean you shouldn’t tip at other restaurants too?
