Suya is a popular West African street food that is loved by many for its spicy, smoky, and flavorful taste. It is made by marinating beef or chicken with a spice mix, which is then skewered and grilled over an open flame. Suya can be eaten on its own as a snack or served with sides like onion, tomato, and cucumber salad or jollof rice. Today I will be sharing an easy recipe for making Suya.

Ingredients:

  • 1 lb of beef or chicken, sliced thinly
  • 1/4 cup of groundnut oil (or any neutral oil)
  • 1/4 cup of ground roasted peanuts
  • 1 tbsp of smoked paprika
  • 1 tbsp of ginger powder
  • 1 tbsp of garlic powder
  • 1 tbsp of onion powder
  • 1 tbsp of cayenne pepper
  • 1 tbsp of salt
  • 1 tsp of black pepper
  • Wooden skewers, soaked in water for at least 30 minutes

Instructions:

  1. In a mixing bowl, combine the groundnut oil, ground roasted peanuts, smoked paprika, ginger powder, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix well until you get a thick paste.
  2. Add the sliced beef or chicken to the spice paste and mix well until the meat is fully coated. Cover the bowl with plastic wrap and marinate the meat in the refrigerator for at least 1 hour, or overnight for a more intense flavor.
  3. Preheat your grill or grill pan to medium-high heat. Thread the meat onto the soaked wooden skewers, making sure to leave some space between each piece.
  4. Grill the skewered meat for 10–15 minutes, turning occasionally, until it is cooked through and slightly charred on the outside.
  5. Remove the skewers from the grill and serve the Suya hot, garnished with sliced onion, tomato, and cucumber salad, if desired.
