I like your idea of having vanilla wafers inside the cookies: its like the double-cookie where you have cookies inside cookies (what you call Cookie-ception). I also like your alternative ideas like putting animal crackers or thin mints inside another cookie.

I wish you combined test 2 with oreos, and see how that tasted. I can easily imagine the taste of lemon cookie with vanilla wafers (because it’s something that a restaurant would have for dessert), but I really can’t imagine the taste of Oreos hidden inside the lemon cookie.

What if you grind the Oreo and Vanilla wafers, then battered together with the lemon cookie dough? This way, you could have that crunchiness you were looking for with the taste of the cookies you want. I would also love to have that combination with a milk. Yum.
