Masala Matki

INGREDIENTS:

· 1 cup Matki

· 1 large onion

· salt to taste

· 3 tsp cut cilantro

· 2 crushed green chillies

· 2 tsp oil

· 1 tablespoon crushed garlic

· 1 tsp mustard seeds

· 1 tsp asafoetida

· 1/2 tsp red chilli powder

· 1/4 tsp garam masala

· 1/4 tsp turmeric

INSTRUCTIONS:

  1. Soak 1 cup matki overnight
  2. Drain the water next day and tie the matki in cloth and keep it for few hours to let it sprout
  3. Heat oil in a pan
  4. Add mustard seeds and after they crackle, add the asafoetida
  5. Add onions and sautee them for a minute
  6. Add grated green chillis and garlic and saute till the onions become translucent
  7. Mix well and then add salt, turmeric, red chilli powder and garam masala
  8. Cook it for a minute and then add matki
  9. Mix well, cover the pan and let the matki cook for 4–5 minutes
  10. Garnish with cilantro and serve hot
