INGREDIENTS:
· 1 cup Matki
· 1 large onion
· salt to taste
· 3 tsp cut cilantro
· 2 crushed green chillies
· 2 tsp oil
· 1 tablespoon crushed garlic
· 1 tsp mustard seeds
· 1 tsp asafoetida
· 1/2 tsp red chilli powder
· 1/4 tsp garam masala
· 1/4 tsp turmeric
INSTRUCTIONS:
- Soak 1 cup matki overnight
- Drain the water next day and tie the matki in cloth and keep it for few hours to let it sprout
- Heat oil in a pan
- Add mustard seeds and after they crackle, add the asafoetida
- Add onions and sautee them for a minute
- Add grated green chillis and garlic and saute till the onions become translucent
- Mix well and then add salt, turmeric, red chilli powder and garam masala
- Cook it for a minute and then add matki
- Mix well, cover the pan and let the matki cook for 4–5 minutes
- Garnish with cilantro and serve hot
