La parité homme-femme est loin d’être acquise dans les cuisines des restaurants, même si les noms de Anne-Sophie Pic, Elena Arzak, Hélène Darroze sont familiers aujourd’hui. Mais de nouveaux noms, souvent méconnus des médias, apparaissent dans La Liste 2019. Leur nombre, encore restreint, est cependant en augmentation. Ainsi pouvons-nous citer cette année : Aylin Yaziacoglu du Restaurant Nicole (Istanbul), Tekuna Gachechiladze, Café Littera à Tbilisi (Georgie), Marta Ortiz du Dulce Patria à Mexico-City, Hélèna Rizzo du Maní à Sao Paulo, Chantel Dartnall du Restaurant Mosaic à Pretoria et aussi Amélie Darvas, Restaurant Aponem, (Vailhan — France)…
A global guide
LA LISTE is inspired by “meta-classifications” used in the academic field (Shanghai ranking), sports (ATP) or other domains (movies, gaming):
For each restaurant, LA LISTE summarizes the evaluations available online or on paper
The ratings assigned by different guides and publications are harmonized and weighted.
The result is an overall score between 0 and 100, rounded up to a quarter of a point, which determines the restaurant’s place in the world ranking.
A total of 620 sources were used, from the most established ones (Michelin, New York Times …) to the most recent ones (Cubapaladar, the first Cuban guide, Chinese “Black Pearl” Guide…)
New faces, new trends
Even though the names Anne-Sophie Pic, Elena Arzak and Hélène Darroze are well known nowadays, parity between men and women in restaurant kitchens is still far from a reality. But new names, often unknown by the media, are popping up in La Liste 2019. Their numbers, still relatively small, are increasing.
