A quesadilla is a popular Mexican dish and type of taco, consisting of a tortilla a flatbread made of corn and wheat, that is filled primarily with cheese, meats, beans, vegetables, and spices and then cooked on a griddle pan. Traditionally a corn tortilla is used for making quesadilla but it can also be made with a flour tortilla basically in northern Mexico and the United States.

A full quesadilla is made with combining two tortillas that hold a layer of cheese, vegetables or meat between them. A half is a single tortilla that has been filled with cheese, vegetables or meat and folded into a half-moon shape. A quicker version of the quesadilla, the cheese tortilla is micro-waved and often served to children. The quesadilla has its origins in colonial Mexico. The quesadilla as food has changed and evolved over many years as people experimented with different variations of it according to their taste. Quesadillas are served at only Mexican restaurants all over the world but also enjoyed in American restaurants.
