Paleo Pasta and Friendships Help Survive Whole30
You can’t always get what you want but if your try sometimes you might find you get what you need
Since I am depriving myself of all my favorite foods I’ve really been trying to indulge more in my friendships. This can be difficult with a packed schedule and all the difficulties of life but my best HS friend and I have been making consistent workout dates every week. We go to the gym for 45 minutes and the minute we walk back into my apartment I start prepping dinner since the only reason why I work out is to eat.
This friend and I have been through it all together. In order to heal broken hearts we binge ate brie cheese while binge watching episodes of Gilmore Girls before binge watching was coined a term. This was back in the days of TiVo and she was the only person I knew to have it back in the day. There is something so comforting about hanging out with a favorite friend while eating good food. It’s the best of both worlds colliding.
After thirteen years of friendship the love for one another and food lives on. My friend is willing to try anything I make which is a plus. I have tried not to disappoint but it can be difficult to make tasty food while dieting.
I’m a big carb loader. I love pastas, I love breads, I love rice, the list goes on. But like all fun things, these are off limits and I have to cheat ways to feel like I’m eating carbs. Insert zucchini noodles. I can easily replace pasta with these veggie noodles. My friend was very impressed but I do need to find some ways to improve so here it goes…
Spinach and Cashew Pesto
- Throw cashews, spinach, olive oil, and garlic in the nutribullet and blend. It’s as easy as that
Shrimp Zucchini Noodles
- You need some sort of vegetable spiralizer
- Spiralize your veggies
- Sauté the zoodles in olive oil and garlic
- Once they have softened add the shrimp and cook until no longer pink
- Squeeze some lemon juice on top
- Add the pesto till it’s all warmed up
The dish was really tasty. It feels like pasta to me but the zoodles release a lot of moisture. I’m going to try salting the noodles to see if that releases the moisture and I will let you know how that turns out. other than that it is really good and definitely worth trying. It’s also super healthy!!!
In closing friends and food are the best. Nothing heals my heart like those two things.
