The Ultimate No-Egg Brownie Recipe

Do you ever have those days where you desperately want to bake something sweet only to find out that you’ve run out of eggs.

Trust me I’ve been in this situation to many times to count and have found the ideal way manipulate the situation into giving me what I want without any compromise on the taste and quality of my bakes.

This recipe takes such little time to make and is a somewhat no-fail recipe, I can guarantee that once you try these brownies you’ll fall in love with this recipe.

Ingredients

  • 3/4 cup Self-raising flour
  • 1/3 cup Cocoa powder
  • 1/4 teaspoon Salt
  • 2 teaspoons Baking powder
  • 1 cup Dark chocolate
  • 1/2 cup Butter
  • 3/4 cup Granulated Sugar
  • 1 teaspoon Vanilla extract
  • 3/4 cup Yogurt

Method

  1. Preheat the oven at 180°c.
  2. Grease and line a 8×8 inch baking tray (if you don’t have baking paper just grease the tray with butter or any odourless oil).
  3. In a bowl sift all the dry ingredients and give them a good mix, in another bowl add the butter and dark chocolate and melt this over a double boiler (or save yourself the trouble and just melt this in the microwave at 30 sec intervals).
  4. To the melted chocolate mix add in the sugar and vanilla extract and mix until combined and cooled (about 2–4 minutes), once cooled add the yogurt and mix until combined.
  5. Add the wet ingredients into the dry ingredients bowl and fold over to combine (Don’t overmix the batter), once combined pour the batter into the prepared tray and tap against any surface to remove excess air bubbles.
  6. Place the tray in the oven at 180°c for 30–35 minutes or until a toothpick comes out clean once inserted.
  7. Serve once cooled (I personally like to eat it with vanilla ice-cream and caramel sauce drizzle on top).
