Christmas Cookies
Christmas 2014 (Flour-less, sweet, crunchy goodies)
A little bake time with my brother= lots of laughing, criticism on my baking skills, and hate for my attempts at “nasty” ‘healthy’ sweets. Needless to say I thought I’d share the yummy treat! So easy, yummy, and simple!

So I forgot to write this down, but as you are placing it on the parchment paper before placing in the oven, we found it helpful to use a tablespoon (like one you eat with) to scoop them onto the cookie sheet and then gently smush the raw cookie down to flatten it a wee bit! It’s recommended 9–11 minutes to bake the cookies, but use your own judgement based on your preference. Some ovens are a little more powerful or the bulb location in the oven can effect the cooking process as well! I know that most of my family likes things a little crunchy so I cooked ours in multiple batches doing the first batch at 13 minutes (golden with a little chew inside) and the next two batches from 14–16 minutes (golden outer with a chewy crunch). Overall, Kolby and my step brother Grant enjoyed them, as did I! I’m excited for my parents to try them. ☺

I used dairy/soy/nut free mini chocolate chips.
AND doubled the coconut call (we all love coconut)! Also I used organic toasted unsweetened coconut!
