Kathryn, this is a wonderful tip for roasted vegetables, but, alas, I can’t handle cast iron. Osteoarthritis in both hands makes it hazardous for me to pick up anything that heavy, even with both hands, because I’ve lost my grip!(My husband would tell you that happened a LONG time ago. We’ve been married 49 years.)
Is there another type of pan you’d recommend? I have a heavy cast aluminum cookie sheet I inherited from my great aunt that I use for everything. Would that work, too?
