My go-to meal when I’m in a hurry…

Everyone has their “go-to” meal when they are in a hurry, or maybe don’t know what to make. It is usually something quick, easy and doesn’t take a lot to clean up. I want to share my go-to meal with you, and I hope you love it as much as me!

First thing, if you don’t like any of the following items just move on to the next post ☺:black beans, eggs and avocado.

Prep time will be 5 minutes MAX. Cook time will be no more than 10 minutes.

Ingredients: eggs (however many you feel like!) 1/2 cup black beans and 1/2 an avocado.

In this picture I did scrambled eggs (mainly because I was craving them, I rarely do scrambled). On a normal night, I will fry two eggs (or as my brother Q likes to call them “volcano eggs” — that one has stayed around for several years).

On the bottom of the plate I will add my black beans (heated). Top with my fried eggs and avocado. I add salt and pepper and BAM — a protein packed dinner.
