Spiced Apple Bircher Muesli

A delicious alternative to muesli. This makes enough for 2 breakfasts, so portion out and store second serving for another day. Toast almonds or nuts, if desired, by toasting in a small, dry fry-pan on medium heat for 1–2 minutes, until golden. Shake pan regularly to avoid burning.

Serves 1

Ingredients

1 apple, grated

¾ cup quick cook rolled oats

½ cup low fat milk (or use your favourite dairy-free milk)

¼ cup low fat natural yoghurt (or use your favourite dairy-free yoghurt)

½ teaspoon vanilla extract or essence (optional)

¼ teaspoon ground cinnamon

½ teaspoon runny honey, pure maple syrup or apple sauce (optional)

Pinch of salt

2–3 tablespoons sliced almonds (or any chopped nuts e.g. walnuts, hazelnuts, brazil nuts) (reserve a few, to garnish)

To serve

2 feijoas, cut in half, flesh scooped out of skin and thinly sliced

Reserved sliced almonds or chopped nuts

Pinch of ground cinnamon

Method

1. In a medium bowl or container, combine all spiced apple bircher muesli ingredients (except almonds). Stir well to combine. Set aside, covered, to soak for at least 10 minutes (or refrigerate overnight).

2. Stir through almonds just before serving.

To serve, divide spiced apple bircher muesli between bowls. Top with feijoa slices, reserved almonds and a sprinkle of cinnamon.
