Chemex!

I have been using a Chemex 8-cup for almost ten years now, and before that I used to travel with a Melitta single-cup mug-with-filter-cone. Good coffee, cheap coffee, fresh ground or been-sitting-in-a-can at work-for a year…it all tastes better through the drip. I use folded unbleached Chemex filters, though the Melitta pre-formed cones work in a pinch and are readily available in supermarkets. It has been suggested that the paper filter is largely responsible for filtering out oils, cholesterol, and bitterness. Contrast with French Press or those gold basket filters.
