Tum Yum Goong — A Thai Soup

In Thai, Tum refers to boiling and Yum refers to spicy vegetables. You can use meat of your choice; Here, I have used shrimp. This soup is made to taste unique by galangal root, Kaffir lime leaves, and lemongrass. These herbs are considered medicinal in Thailand.

This dish is much easier to prepare than it sounds.


Shrimp- 2 cups

Mushroom-2 cups

Lemongrass- 1 stalk

Kaffir lime leaves- 5

Onion- 1 cup

Garlic-5 cloves

Shrimp paste- 1/4 teaspoon

Cilantro- 2 tablespoons

Bouillon Chicken Cubes- 1

Galangal- 4 slices

Fish sauce- 1/4 cup

Laalmohn (Gulab Jamun)

Laalmohn is the Nepali name for what is known as Gulab Jamun in India. This syrupy-sweet dish is one of the most popular desserts in Nepali and Indian meals and a must-have in traditional celebrations like weddings.

Laalmohn is made by mixing powder milk, all purpose flour then rolling into balls, frying, and immersing into sugar syrup.


Water- 2 cups

Sugar- 3 cups

Cardamom powder- 1 teaspoon

Lemon juice- 2 teaspoons

Rose water- 2 teaspoons

Nido- 1.5 cups

Ghee- 4 tablespoons

Milk- 1/2 cup

All purpose flour- 1/2 cup

Baking powder- 1 teaspoon

Spinach and cheese Quiche


Pastas come in all shape and sizes. For this recipe, you will need rigatoni pastas that are cylindrical in shape:

Rigatoni- 1 packet

Egg plant- 1 (diced)

Olive oil- 4 tablespoons

Garlic- 4 cloves

Tomato paste- 4 tablespoons

Marinara sauce- 1/2 cup

Salt per taste

Parmesan cheese- 1 cup


Boil water, add some salt, and add rigatoni and cook for about 13 minutes.

Remove heat and take rigatoni out of the boiling water, filter the water out, and set it aside.

Heat oil in a pan. Sauté garlic. Add diced eggplant. Sprinkle salt and cook until tender. Add tomato paste and marinara sauce.

Add rigatoni and stir.

Add cheese as desired and serve warm.


In Nepal, vegetables are available fresh and are sold by street vendors who sell mostly organic vegetables. Inorganic vegetables are not too common.

Vegetable curries are must-haves for every meal in every household. They are consumed with rice, roti, and, sometimes, corn meal (dhedo).

Thai Panang Chicken Curry

I learned about this dish while researching about Southeast Asian cuisines. I was intrigued with the types of spices required for this dish. Galangal roots and lemongrass are not common spices in Nepali and Indian dishes. I later learned to use these spices that create a unique flavor in curries and soup.

Thai panang chicken curry is made with chicken, simmered in coconut milk, shrimp paste, fish oil, and homemade curry paste. Garnished with kaffir lime leaves and coconut milk and served with warm, white jasmine rice.
