Carrot-Ginger-Miso Sauce

I’ve made this sauce many times… and every time it’s a success. It’s so good and goes well in so many meals, that I recommend you to give it a shoot to impress your next guests!

The carrot gives the body to the sauce, but the magical components are the ones that create the perfect balance among the 4 basic flavours that you need to nail a sauce: the saltiness of the miso, the sweetness of the maple syrup, the sourness of the lemon, and the pungent kick of the ginger.

Ingredients

  • 4 medium carrots
  • 3 tablespoons of white miso
  • 2 tablespoons of lemon
  • 3 cm of ginger
  • 2 tablespoons of maple syrup
  • 2 tablespoons of olive oil
  • 1 tsp of toasted sesame oil (optional)
  • 1/2 cup of water

Instructions

Steam the carrots until they are very tender.

Grate ginger if your food processor or blender is not very powerful.

Blend all the ingredients in a blender or food processor until very smooth.

Check the consistency and add water if you want it more runny.
