Gluten-free Buckwheat Bread

There’s nothing more convenient than grabbing a few slices of bread from the freezer to sort out just about any meal or snack. That’s why, the gluten-free essentials series in this blog can’t go without a simple recipe for a loaf of bread.
This has to be one of the easiest bread recipes — no flour mess, no yeast, no rising time and clean hands from beginning to end. It only uses buckwheat groats and psyllium husk, which is a natural fiber from the psyllium seed that will help absorb water from the dough and hold the bread together. This extra fiber might even improve your digestion as an added bonus!
Ingredients
- 1 1/2 cup of buckwheat soaked for 8 hours
- 1 cup of water
- 1 teaspoon of baking soda
- ½ teaspoon of salt
- 1 tablespoon of olive oil
- 1 tablespoon of apple cider vinegar
- 1 heaping spoon of psyllium husk powder
Instructions
Heat up the oven to 150°C.
Rinse the buckwheat groats a few times to get rid of the slimy water that forms after soaking. Then throw them in the blender or food processor.
Add the water, baking soda, oil and salt. Start the blender and gradually add more water until you have just enough to make the blender run smoothly. Add 1/4 cup at the time.
Blend until the batter is smooth and homogeneous.
Add vinegar, pulse a few times to mix.
Add psyllium husk and blend for a few seconds. The physillum husk absorbs most of the water and makes a stiff dough almost instantly. Spoon the dough out the of the blender into a silicon loaf pan. Try to remove any air from the dough, making it even at the top.

Bake for 45 minutes. Then, remove the bread from the loaf pan and place directly on the grill of the oven. Bake for another 45 minutes.
Cut the loaf in half to check if it is cooked inside. If it seems still very moist, put the two halves back in the oven for another 15 to 30 minutes.


Slice the bread, toast a few slices and enjoy them with your favorite topping!

Optional
- Try freezing some of the slices.
- If you don’t have psyllium husk, use linseed or chia seeds whole or powdered.
- Add 1/4 cup of sunflower seeds (or any other seed or nut) to the batter just before adding the psyllium husk powder. Add a little extra water to the batter in this case.
