Healthy snacks: Gluten free Blueberries cookies.

You can call them also “guilt-free cookies” there is no sugar, no butter and no dairy in this recipe.

These cookies are very light. Since they don’t have any butter they won't feel like a bomb in your stomach.

For the recipe, you are going to need:

  • 1 cup oat flour (processed oats)
  • 3/4 cup greek yogurt
  • 6 medjool dates
  • 1 tsp vanilla extract
  • 1 egg white
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup blueberries
  • 1/2 cup chocolate chips (I used 70% dark chocolate)

Blend the dates, yogurt, vanilla and egg white in the food processor until you have a smooth pure.

Besides, combine the oat flour with the salt and baking powder. Them add the dry ingredients into the food processor and blend till combined.
Put the mixture in a big bowl and add the chocolate and the blueberries, do it slowly, you don’t want to smash the blueberries.

Pre-heat the oven to 200 C.
Spray a cooking pan with cooking spray. Distribute the dough with a spoon to give shape to the cookies. They won't grow much.

Set the cookies in the oven and cook for 10–12 min.
Let them cool down and enjoy!
