Why Espressos in America are not Good?

Great article with lots of information.

I’ve lived in Bologna for the past 20 yrs and they always serve the coffee (espresso) in a thick ceramic cup and with a small glass of sparkling water, although many have now switched to still water :(. Capuccinos and Caffe Lattes have a design on the foam made with a quill, again for as long as I can remember. The cups are usually warm because they’ve just been washed — that’s the kind of turnover my favorite caffe’ bar has.

Other smaller and great brands include Morganti (Rome) Zanetti and Lelli (Bologna).
