I’m not diabetic but tend to be hypoglycaemic so I try to eat in a low glycemic way. It means more even energy for me and no crashing. I saw you write somewhere that you eat close to vegetarian. I’m vegan so I eat a lot of complex carbs, mostly veggies. I don’t eat a ton of grains but I do like quinoa which has a good amount of protein in it. Can you do forbidden rice? I love it. It’s more like a nut than a grain.
