If I didn’t need certain applications I’d use Linux on a non-Apple laptop (I use it for servers already). And it’d take a lot to drag me back to Windows. So, for now at least, I feel I’m basically trapped into using Apple products

It’s a shame you feel trapped into using Apple products. I use Linux every day for my work as an Android app developer and I’m grateful that all the tools I need are provided for me.

Perhaps something like a bounty which other people could donate to to pay for the development cost of creating a Linux alternative would be the solution?
