Then there’s the other part of the issue: forcing prices down to keep dining affordable. Nashville, for instance, has a number of restaurants — some mediocre, some excellent quality — where one can get a healthy, relatively balanced meal for $15 or under. That’s not very different in price from what my family was paying for full service, fresh-food restaurants in upstate NY 40 years ago. Today’s restaurants that are keeping good, healthy food affordable for the working classes are heroes!
