It’s difficult to disagree with you, however your definition is useless. In fact, the biggest problem is not to say, that consciousness it the observational experience — which is pretty much obvious. The real problem is to explain how is it possible to describe the observational experience in any scientific model. And for now nobody (including you) has given answer to this question. This is why consciousness is so amazing and why there are philosophical debates on this topic. We still even don’t know what kind of answer could explain consciousness, we still haven’t found a good question to ask.
